 Hearty Spaghetti

Fresh Roma (plum) Tomatoes
Fresh Cluster Tomatoes
4-5 Cans of Tomatoe Paste
Fresh Shiitake Mushrooms
Fresh White (Salad) Mushrooms
Italian Sausage (Spicy or Mild depending on your taste)
Fresh Ground Beef
Whole Onion
Italian Seasoning
Salt and Pepper
Fresh Ground Black Pepper
Fresh Parsley and Basil
EVOO (Extra Virgin Olive Oil)
Angel Hair Pasta

1.) Crush Roma and Cluster Tomatoes in large bowl. (I use my hands but thats me LOL)
2.) Dice 1 whole onion fine and add to the tomatoes. Mix together (again I use my hands lol)
3.) Chop up Basil and Parsley fine and add to the mixture.
4.) Drizzle a few tablespoons of EVOO (depending on how much Tomatoes you have used) over the mixture.
5.) Take 1 Shiitake Mushroom and chop up fine. Add to mixture.
6.) Let Mixture stand in refridgerator for 1-2 hours.
7.) Brown the Italian Sausage and Ground Beef in a saute pan and let it rest.
8.) Take Tomatoe mixture out of refridgerator and add to a large pot.
9.) Bring bring to a simmer stiring often then let simmer for 15-20 minutes. Stiring every few minutes making sure
it does not stick to the bottom of the pot.
10.) Add can of tomatoe paste and continue to simmer.
11.) Finely chop Garlic (to your taste) and add to the pot.
12.) Add Italian Seasoning, Salt and Pepper, and Fresh Ground Black Pepper to the pot. (All to your taste)
13.) You may not also add more Fresh Parsley and Basil to your taste. Large Portions. Do Not Chop.
14.) Take fresh Shiitake Mushrooms and slice into long thick strands. Add to pot.
15.) Take White Mushrooms. Add some whole and some sliced into halves and quarters. To your liking.
16.) Add ground beef (WITH THE JUICE DO NOT POUR IT OUT!) to the pot. (Make sure to get as much of the small bits off
the bottom of the pan into the sauce)
17.) Take half of the Italian Sausage and cut it into slices. Take the other half and cut it into 3-4 inch pieces.
18.) Add a bit more of EVOO and let simmer. You may let the mixture simmer from 1-6 Hours. (I personally let it simmer
as long as possible without burning to let all the flavors blend together)
19.) Stir every 15-30 minutes.
20.) Once you have let it simmer. If you have let it simmer for a long time you will have noticed that most of the Mushrooms
have broken down and mixed into the sauce. You can leave it like this or add more Mushrooms to the sauce now. Let simmer
for 5-10 more minutes.
21.) Boil Angel Hair Pasta.
22.) Serve sauce over a bed of pasta. Accenting with large pieces of Italian Sausage and Mushrooms.
23.) Enjoy!

(Note: Amount of Ingredients may vary depending on how much you are making and your personal taste. I do not measure how much
of each I am adding when cooking I do it all to taste. Taste often and add a little at a time and you can't go wrong! Very Happy)
